Vegan Eats: Vegan Dark Chocolate Brownie Cookies

Confession: I’m addicted to browsing my Pinterest feed where it’s filled with colourful vegan desserts inspirations.

Hands up who gets drooling every time swiping through their Pins?

I’m sure I’m not alone here.

I recently came across the lovely Kim who’s the cute sweet pea behind her vegan blog EarthyKim. I’m in love with her creativity turning every single one of my favourite sweet treats vegan.

From the mouth-watering vegan Ferrero Rocher, to vegan peanut butter slice and vegan cinnamon glaze donut, there’s simply nothing that Kim can’t ‘veganise’.

I thought I’d share this favourite recipe from her collection, which is one that looks so easy peasy to bake, and is no doubt an all time party favourite at my house.

Vegan Dark Chocolate Brownie Cookies Recipe


You’ll need: 

♦ 3/4 cup coconut sugar♦ 1/2 cup coconut oil♦ 1/3 cup plant milk♦ 1 tsp vanilla essence♦ 1 1/4 cup plain flour (use buckwheat if gluten free)♦ 1/2 cup almond meal♦ 1 tsp baking powder♦ 1/2 cup cocoa powder♦ Vegan dark chocolate Method:
1. Place the coconut sugar and coconut oil into a pot and place over medium heat. Stir for 5 minutes or until coconut sugar is almost dissolved. Pour into a bowl.2. Mix into this the plant milk and vanilla essence. The mixture might not fully combine.3. In a separate bowl mix together all the dry ingredients, then fold into
the wet ingredients and mix until fully combined. You should now have a soft, malleable dough.4. Take tablespoonfuls and using your hands roll it into a ball and press down into a cookie shape. Alternatively you can use cookie cutters. Repeat with remaining dough. 5. Place on a tray lined with baking paper. Roughly chop or break your dark chocolate and press a piece into each cookie. I love my cookies really decadent so I put a whole big piece of chocolate into each!6. Place in an oven preheated at 180 degrees celcius for 10-12 minutes. Viola! Enjoy.

Tips:  ♦ The cookies will seem under cooked when you first remove them from the oven, but they will firm up as they cool.

♦ I created a macadamia version by stirring in chopped macadamia to the dough. If you love nutty chocolate cookies, definitely give this a try! I think hazelnuts and peanuts will also taste delicious.
